

For
almost 15 years Paule NEYRAT has been
a journalist in the feminine press (Cosmopolitan, Vital...) as well
as Head of ESCOFFIER courses, proficiency courses in gastronomical cuisine.
Paule, granddaughter of Paul THALAMAS, who founded the ESCOFFIER Foundation
with Eugène HERBODEAU and Joseph DONON, has taken up the torch
and for many years has been organising courses during which various
celebrated star-awarded Chefs teach their cuisine.
Paule NEYRAT has published several books on gastronomy and nutrition
:
“La santé gourmande”, pub. Lattès (1998),
"Le livre des recettes", pub. Le Félin (1997), which
is a compilation of 45 recipes by 45 star-awarded Chefs, “les
produits du marché”, pub. Larousse (1988), a veritable
reference book of nutrition which lists all foods from A to Z with advice
on buying and recipes, “les vertus des aliments”, pub. Solar
(2000), dealing with the role played by foods in our health.
Paule is currently a consultant dietetician on the Internet and offers
advice and recommendations with passion and generosity.Her site, ligne-et-sante.com,
specialising in healthy eating consultancy, has become a reference on
the Net and Paule is constantly enriching her offers and services to
the general public.
The latest and newest feature is a very useful service for all those
who are balanced eating and weight conscious. Named "Qu’est-ce
qu’on mange?" ( "What
shall we eat ?" ), this service offers balanced meals with
shopping lists.This can be printed or transferred onto Palm.
These healthy eating recipes have been created for 2,4 or 6 persons

What does it involve ?
14 new and balanced recipes are offered to subscribers every week.
The recipes for the menus are chosen on-line. The number of guests planned
for each dish is given.
After validating his choice the subscriber receives his personal selection
together with an exact list of the ingredients ( products and quantities)
